Garlic Chilli Prawns
• Ingredients:
1 tablespoon peanut oil;
24 raw king prawns (shrimp), peeled and deveined, tails intact;
2 garlic cloves, finel chopped;
1 small red chilli, seeded and finely chopped;
1-2 tablespoons chilli garlic sauce;
2 teaspoons dark soy sauce;
Sesame oil, for drizzling;
2 spring onions (scallions), green part only, cut diagonally into 3 cm lengths;

• Instruction:
Heat a wok over high heat, add the oil and swirl to coat. Add the prawns and the garlic and stir-fry for 1 minute, or until the prawns turn pink. Add the chilli, chilli garlic sauce and soy sauce and stir-fry for a further 2 minutes, or until the prawns are curled and glazed with the sauce. Drizzle with sesame oil, garnish with spring onion and serve.
